Last night I took an incredible class at The Brooklyn Kitchen - Pig Butchering 101 w/ Tom Mylan of Marlow + Sons.
Tom is my boy. I had the honor of burying a pig carcass butchered by Tom, post-roast, and can attest to the man’s skills. Also, this is on my Fall list.
